Instructions
- Preheat oven to 350°F (175°C) and line a 9×13-inch baking pan with parchment paper, leaving overhang.
- Make the crust: Mix flour, brown sugar, and softened butter until crumbly. Press into the pan and bake for 10–15 minutes until lightly browned.
- Prepare cheesecake layer: Beat cream cheese and granulated sugar until smooth. Beat in eggs one at a time, then add vanilla. Pour over warm crust.
- Mix chopped apples with sugar, cinnamon, and nutmeg. Spread evenly over cheesecake layer.
- Make streusel topping: Combine brown sugar, flour, oats, and butter until crumbly. Sprinkle over apple layer.
- Bake for 25–30 minutes, or until the edges are set and the center slightly jiggles.
- Cool completely on a wire rack, then chill for at least 2 hours or overnight.
- Drizzle caramel sauce over chilled bars, slice into 24 bars, and serve.
