Ingredients

  • 2 large egg whites
  • 200 g almond flour
  • 50 g granulated sugar

  • 1 tablespoon powdered sugar for dusting

Instructions

  1. In a large mixing bowl, whisk the egg whites and granulated sugar until slightly foamy and well combined.
  2. Add the almond flour, orange zest, and fresh orange juice to the bowl.
  3. Mix until a smooth and slightly sticky dough forms.
  4. Form the dough into small balls about 2 tablespoons each. Lightly dust hands with powdered sugar if the dough sticks.
  5. Place the dough balls on a baking sheet lined with parchment paper.
  6. Use your thumb or the back of a spoon to create a small indentation in the center of each cookie.
  7. Spoon a small amount of orange marmalade into each indentation.
  8. Chill the cookies in the refrigerator for at least 15 minutes.
  9. Preheat the oven to 175°C (356°F).
  10. Bake the cookies for about 12 minutes until the tops are lightly crisp and the centers remain soft.
