Ingredients
- 2 large egg whites
- 200 g almond flour
- 50 g granulated sugar
- 3 teaspoons fresh orange juice
- 1 teaspoon finely grated orange zest
- 3 tablespoons orange marmalade
- 1 tablespoon powdered sugar for dusting
Instructions
- In a large mixing bowl, whisk the egg whites and granulated sugar until slightly foamy and well combined.
- Add the almond flour, orange zest, and fresh orange juice to the bowl.
- Mix until a smooth and slightly sticky dough forms.
- Form the dough into small balls about 2 tablespoons each. Lightly dust hands with powdered sugar if the dough sticks.
- Place the dough balls on a baking sheet lined with parchment paper.
- Use your thumb or the back of a spoon to create a small indentation in the center of each cookie.
- Spoon a small amount of orange marmalade into each indentation.
- Chill the cookies in the refrigerator for at least 15 minutes.
- Preheat the oven to 175°C (356°F).
- Bake the cookies for about 12 minutes until the tops are lightly crisp and the centers remain soft.
- Transfer cookies to a cooling rack and allow them to cool completely.
- Dust lightly with powdered sugar before serving.
Notes
- Fresh orange juice and zest provide the best citrus flavor.
- Chilling the dough helps the cookies hold their shape while baking.
- Almond flour creates a naturally gluten-free cookie with a delicate texture.
- Dust hands with powdered sugar if the dough becomes sticky during shaping.
- Store cookies in an airtight container to keep them soft.
