Ingredients

  • 1 1/4 cups Italian-style bread crumbs
  • 1 1/4 cups freshly grated Parmesan cheese

  • 2 (9-ounce) packages frozen artichoke hearts, thawed, drained, and roughly chopped
  • 3 (28-ounce) cans Italian-style green beans, drained
  • 2/3 cup extra virgin olive oil, divided
  • Chopped parsley for garnish

Instructions

  1. Preheat oven to 375°F (190°C) and lightly grease a 9×13-inch baking dish.
  2. In a large bowl, mix bread crumbs, Parmesan, garlic, salt, and pepper. Reserve 1/3 cup of the mixture for topping.
  3. Add chopped artichoke hearts, green beans, and 1/2 cup olive oil to the bowl. Gently fold to combine.
  4. Transfer the mixture to the prepared baking dish. Sprinkle reserved breadcrumbs on top and drizzle with remaining olive oil.
  5. Cover with foil and bake for 30 minutes. Uncover and bake an additional 10–15 minutes until golden and bubbly.
  6. Garnish with chopped parsley before serving.
