Kababayan Bread, also known as Salakot Bread, is a classic Filipino muffin with a golden dome top and a soft, sweet interior. Its unique hat-like shape and nostalgic flavor make it a favorite snack or breakfast treat with coffee or tea.

Ingredients

  • Shortening or lard, for greasing
  • Vegetable oil, for greasing
  • All-purpose flour, for greasing
  • 1 cup evaporated milk
  • 1/2 cup water
  • 1 cup granulated sugar
  • 2 large eggs
  • 1/2 cup unsalted butter, melted
  • 1 tsp vanilla extract
  • 2 cups all-purpose flour
  • 1 tbsp baking powder
  • 1/2 tsp salt

Instructions

  1. Preheat oven to 350°F (175°C).
  2. In a bowl, combine evaporated milk, water, sugar, and eggs. Whisk until sugar is dissolved.
  3. Add melted butter and vanilla extract, mixing until smooth.
  4. Sift in flour, baking powder, and salt. Gently fold until just combined.
  5. In a small bowl, mix shortening, oil, and flour. Generously grease muffin cups with the mixture to help create the dome shape.
  6. Pour batter into greased muffin cups, filling each about 3/4 full.
  7. Bake for 20–25 minutes, or until tops are golden and a toothpick inserted comes out clean.
  8. Cool in the pan for 5–10 minutes before transferring to a wire rack to cool completely.

Notes

  • Add yellow food coloring for a more vibrant, classic look.
  • Swap some evaporated milk for cream for a richer taste.
  • Sprinkle sugar on top before baking or drizzle glaze after cooling for extra sweetness.
  • Don’t overmix the batter to ensure a light texture.
