Ingredients
- 2 cups shredded Swiss cheese
- 1/2 pound sliced corned beef deli meat
- 1 cup sauerkraut, drained and squeezed dry
- 1/4 cup mayonnaise
Instructions
- Preheat your oven to 400°F (200°C). Line a large baking sheet with parchment paper.
- Divide the shredded Swiss cheese into four equal piles on the baking sheet, spreading each into a 4–5 inch circle with space between.
- Bake for 6 to 8 minutes until the cheese is melted and edges are golden and crisp.
- Let the cheese cool for 1 minute until pliable but not hardened.
- In a small bowl, mix the mayonnaise and sauerkraut until combined.
- Place slices of corned beef on each cheese circle and spoon the sauerkraut mixture over the meat.
- Carefully roll each cheese circle into a tight roll-up, seam side down.
- Serve immediately while warm and crispy.
Notes
- Use parchment paper to prevent sticking.
- Drain sauerkraut well to avoid soggy roll-ups.
- Add mustard or cream cheese for flavor variation.
- Best served fresh but can be reheated in the oven.
