Keto Crispy Reuben Roll-Ups are a low-carb take on a deli classic, featuring crispy baked Swiss cheese rolled around savory corned beef, creamy sauerkraut filling, and bold Reuben flavors in every bite.

Ingredients

  • 2 cups shredded Swiss cheese
  • 1/2 pound sliced corned beef deli meat
  • 1 cup sauerkraut, drained and squeezed dry
  • 1/4 cup mayonnaise

Instructions

  1. Preheat your oven to 400°F (200°C). Line a large baking sheet with parchment paper.
  2. Divide the shredded Swiss cheese into four equal piles on the baking sheet, spreading each into a 4–5 inch circle with space between.
  3. Bake for 6 to 8 minutes until the cheese is melted and edges are golden and crisp.
  4. Let the cheese cool for 1 minute until pliable but not hardened.
  5. In a small bowl, mix the mayonnaise and sauerkraut until combined.
  6. Place slices of corned beef on each cheese circle and spoon the sauerkraut mixture over the meat.
  7. Carefully roll each cheese circle into a tight roll-up, seam side down.
  8. Serve immediately while warm and crispy.
