Ingredients
- 6 ripe kiwis, peeled and cut into pieces
- 4 additional kiwis, sliced for garnish
- 170 grams blueberries, gently crushed
- 170 grams blueberries, whole for garnish
- 60 millilitres fresh lime juice
- 100 grams granulated sugar, or to taste
- 35 grams fresh mint leaves
- 360 to 480 millilitres sparkling water
- Ice cubes, as needed
- Blue or green decorating sugar for glass rims
Instructions
- Place peeled kiwi pieces, lime juice, and sugar in a small food processor. Pulse into a coarse puree with some texture remaining.
- Transfer the kiwi mixture to a large pitcher.
- Gently crush 170 g of blueberries using a muddler or the back of a spoon. Set aside.
- Rub a lime wedge around each glass rim and dip into colored decorating sugar.
- In the pitcher, layer ice, mint leaves, kiwi slices, and crushed blueberries over the kiwi puree.
- Slowly pour in the sparkling water and stir gently to preserve the bubbles.
- Pour the mixture into prepared glasses over fresh ice. Garnish with whole blueberries, fresh mint, and a kiwi slice.
Notes
- Substitute blueberries with raspberries or blackberries for variety.
- Add pineapple chunks for a tropical twist.
- Adjust sugar to taste based on fruit ripeness.
- Only add sparkling water before serving to keep the drink fizzy.
- Plain sparkling water works best to highlight fruit flavors.
