Lemon Poppy Seed Energy Bites are bright, zesty, protein-packed no-bake snacks that taste like a lemon muffin. Made with oats, plant-based protein, and fresh lemon, they’re dairy-free, gluten-free, and perfect for meal prep or on-the-go snacking.

  • Total Time: 10 minutes
  • Yield: 28 bites

Ingredients

1 cup plant-based vanilla protein powder

1 cup old-fashioned rolled oats

1 tbsp poppy seeds

2 tbsp Truvia or other granulated sweetener

Zest of 1 lemon (or more for stronger flavor)

1/4 cup fresh lemon juice

24 tbsp water (adjust as needed for consistency)

Instructions

  1. In a large bowl, mix together protein powder, oats, poppy seeds, sweetener, and lemon zest.
  2. Pour in lemon juice and water, starting with 2 tbsp water and adding more as needed.
  3. Stir until a sticky dough forms. Adjust texture with more water or oats if necessary.
  4. Press and shape into ¾-inch bite-sized balls.
  5. Store in an airtight container in the fridge. Enjoy straight from the fridge or at room temp.

Notes

  • Use Meyer lemons for a sweeter flavor.
  • Skip poppy seeds if desired; flavor remains delicious.
  • Adjust liquid depending on protein powder consistency.
  • Freeze in a single layer, then transfer to a bag for longer storage.
  • These bites travel well and don’t require reheating.
