1 cup plant-based vanilla protein powder
1 cup old-fashioned rolled oats
1 tbsp poppy seeds
2 tbsp Truvia or other granulated sweetener
Zest of 1 lemon (or more for stronger flavor)
1/4 cup fresh lemon juice
2–4 tbsp water (adjust as needed for consistency)
Instructions
- In a large bowl, mix together protein powder, oats, poppy seeds, sweetener, and lemon zest.
- Pour in lemon juice and water, starting with 2 tbsp water and adding more as needed.
- Stir until a sticky dough forms. Adjust texture with more water or oats if necessary.
- Press and shape into ¾-inch bite-sized balls.
- Store in an airtight container in the fridge. Enjoy straight from the fridge or at room temp.
Notes
- Use Meyer lemons for a sweeter flavor.
- Skip poppy seeds if desired; flavor remains delicious.
- Adjust liquid depending on protein powder consistency.
- Freeze in a single layer, then transfer to a bag for longer storage.
