Ingredients
- 1 (0.8-ounce) package freeze-dried strawberries
- 3/4 cup whole-milk plain yogurt
- 2 tablespoons vanilla extract
- 1 teaspoon grated lemon zest
- 1/4 teaspoon ground pepper
- 1/4 teaspoon ground cardamom
- 1/8 teaspoon salt
- 3 cups quartered hulled medium strawberries
Instructions
- Line a large baking sheet with parchment paper.
- Crush freeze-dried strawberries in a zip-top bag using a rolling pin until finely powdered.
- In a medium bowl, mix yogurt, vanilla extract, lemon zest, pepper, cardamom, and salt until smooth.
- Add fresh strawberries and gently stir to coat evenly.
- Using a fork, lift one strawberry piece at a time, allowing excess yogurt to drip off, and place on prepared baking sheet.
- Repeat with all strawberries, spacing them slightly apart.
- Sprinkle crushed freeze-dried strawberry powder on top.
- Freeze uncovered for at least 2 hours, until firm.
- Before serving, let sit at room temperature for about 5 minutes to slightly soften.
Notes
- Use Greek yogurt for a thicker coating.
- Cardamom can be swapped with cinnamon or ground ginger for flavor variation.
- Store in an airtight container in the freezer for up to 3 days.
- Other fruits like blueberries or mango can be substituted if they are firm and not too juicy.
