Ingredients

  • 1 (0.8-ounce) package freeze-dried strawberries
  • 3/4 cup whole-milk plain yogurt
  • 2 tablespoons vanilla extract
  • 1 teaspoon grated lemon zest
  • 1/4 teaspoon ground pepper
  • 1/4 teaspoon ground cardamom
  • 1/8 teaspoon salt
  • 3 cups quartered hulled medium strawberries

Instructions

  1. Line a large baking sheet with parchment paper.
  2. Crush freeze-dried strawberries in a zip-top bag using a rolling pin until finely powdered.
  3. In a medium bowl, mix yogurt, vanilla extract, lemon zest, pepper, cardamom, and salt until smooth.
  4. Add fresh strawberries and gently stir to coat evenly.
  5. Using a fork, lift one strawberry piece at a time, allowing excess yogurt to drip off, and place on prepared baking sheet.
  6. Repeat with all strawberries, spacing them slightly apart.
  7. Sprinkle crushed freeze-dried strawberry powder on top.
  8. Freeze uncovered for at least 2 hours, until firm.
  9. Before serving, let sit at room temperature for about 5 minutes to slightly soften.
