  • 1 large egg

Instructions

  1. Preheat oven to 350°F (175°C) and line a baking sheet with parchment paper.
  2. Whisk together flour, baking soda, baking powder, and salt in a medium bowl.
  3. In a large bowl, beat butter and granulated sugar until light and fluffy (about 2 minutes).
  4. Mix in egg, vanilla extract, lemon juice, and lemon zest until smooth.
  5. Gradually stir in the dry ingredients until a soft dough forms.
  6. Optional: Roll tablespoon-sized dough balls in powdered sugar for a crackly finish.
  7. Place dough balls 2 inches apart on prepared baking sheet.
  8. Bake for 8–10 minutes, until edges are set and centers are slightly underbaked.
  9. Cool on baking sheet for 2 minutes, then transfer to wire rack to cool completely.
  10. Optional: Drizzle cooled cookies with lemon glaze made from lemon juice and powdered sugar.
