Ingredients
- 3 medium yams
- 2 tablespoons olive oil
- 1/2 teaspoon fine sea salt (divided)
- 1/4 cup (56 g) unsalted butter
- 1/4 cup (60 ml) maple syrup
- 2 sprigs fresh thyme, leaves removed, plus extra for garnish
Instructions
- Preheat oven to 180°C (350°F).
- Scrub yams and trim ends. Place each yam between chopsticks or in a spoon and slice thin cuts across the top without cutting all the way through.
- Arrange yams in a baking dish. Drizzle with olive oil and sprinkle with half the salt, ensuring some gets between the slices.
- Bake for 30 minutes.
- Meanwhile, melt butter and mix with maple syrup, remaining salt, and thyme leaves.
- Remove yams from oven and spoon maple butter mixture over them, letting it seep between slices.
- Return to oven and bake for another 15 minutes until tender.
- Pour sauce from the pan into a small saucepan and keep yams warm in the oven.
- Boil the sauce for about 5 minutes until slightly thickened.
- Spoon the reduced sauce over the yams, garnish with thyme, and serve immediately.
Notes
- Sweet potatoes can be used instead of yams.
- Add cinnamon or nutmeg for a warmer flavor.
- Sprinkle chili flakes for a sweet-spicy twist.
- Top with chopped pecans or walnuts for added texture.
