Ingredients

  • 3 medium yams
  • 2 tablespoons olive oil
  • 1/2 teaspoon fine sea salt (divided)
  • 1/4 cup (56 g) unsalted butter
  • 1/4 cup (60 ml) maple syrup
  • 2 sprigs fresh thyme, leaves removed, plus extra for garnish

Instructions

  1. Preheat oven to 180°C (350°F).
  2. Scrub yams and trim ends. Place each yam between chopsticks or in a spoon and slice thin cuts across the top without cutting all the way through.
  3. Arrange yams in a baking dish. Drizzle with olive oil and sprinkle with half the salt, ensuring some gets between the slices.
  4. Bake for 30 minutes.
  5. Meanwhile, melt butter and mix with maple syrup, remaining salt, and thyme leaves.
  6. Remove yams from oven and spoon maple butter mixture over them, letting it seep between slices.
  7. Return to oven and bake for another 15 minutes until tender.
  8. Pour sauce from the pan into a small saucepan and keep yams warm in the oven.
  9. Boil the sauce for about 5 minutes until slightly thickened.
  10. Spoon the reduced sauce over the yams, garnish with thyme, and serve immediately.
