Chewy, golden oatmeal chocolate chip bars that combine the comfort of oatmeal cookies with the ease of a one-pan dessert. Perfectly soft in the center with crisp edges and endless mix-in options.

Ingredients

  • 1 cup all-purpose flour
  • 1/2 tsp baking powder
  • 1/2 tsp ground cinnamon
  • 1/4 tsp kosher salt
  • 1/2 cup unsalted butter, melted and slightly cooled
  • 1 cup brown sugar (light or dark)
  • 1 large egg
  • 1 tsp pure vanilla extract
  • 1 1/2 cups old-fashioned/rolled oats
  • 1 cup semi-sweet chocolate chips
  • 1/2 cup M&Ms (optional)

Instructions

  1. Preheat oven to 350°F (177°C). Line an 8×8 metal baking pan with parchment paper or lightly grease.
  2. In a medium bowl, whisk together flour, baking powder, cinnamon, and salt.
  3. In a large bowl, whisk melted butter and brown sugar until combined. Stir in egg and vanilla.
  4. Add dry ingredients to wet and stir until just combined. Do not overmix.
  5. Fold in oats, chocolate chips, and M&Ms.
  6. Spread batter evenly into prepared pan. Sprinkle extra mix-ins on top if desired.
  7. Bake for 24–28 minutes, until edges are golden and center is set. For softer bars, bake closer to 24 minutes.
  8. Cool completely, then lift from pan, slice into 16 bars, and serve.

Notes

  • Use butterscotch chips, Reese’s pieces, or holiday M&Ms for fun variations.
  • Add toasted nuts or raisins for extra flavor and texture.
  • To make gluten-free, substitute flour with a 1:1 gluten-free blend and use certified gluten-free oats.
