Ingredients
- 1 lb (450 g) ground beef
- 1 small onion, diced (about ½ cup)
- 2 cups (480 ml) beef broth
- 1 cup (240 ml) milk
- 8 oz (225 g) uncooked pasta (rotini, penne, or other short pasta)
- 1 packet (1 oz / 28 g) ranch seasoning mix
- 2 cups (200 g) shredded cheddar cheese
- 1 Tbsp (15 ml) olive oil
- Salt and black pepper, to taste
Instructions
- In a large pot or deep skillet, heat olive oil over medium heat. Add ground beef and diced onion. Cook for 5–7 minutes, until beef is browned and onion is soft. Drain excess grease if needed.
- Pour in beef broth and milk. Stir in ranch seasoning mix and bring to a gentle boil.
- Add uncooked pasta, stir, then reduce heat to medium-low. Cover and simmer for 10–12 minutes, stirring occasionally, until pasta is tender and most of the liquid is absorbed.
- Remove from heat and stir in shredded cheddar cheese until melted and creamy.
- Season with salt and black pepper to taste and serve immediately.

- Ground turkey or chicken can replace beef for a lighter version.
- Add vegetables like peas, spinach, or bell peppers for extra nutrition.
