A creamy, flavorful white chicken chili made with cream cheese, salsa verde, white beans, and shredded chicken. It’s cozy, hearty, and perfect for a comforting meal.

Ingredients

  • 3 boneless, skinless chicken breasts (or 34 cups shredded rotisserie chicken)
  • 1 tablespoon olive oil
  • 1 medium yellow onion, diced
  • 1 teaspoon minced garlic
  • 4 cups (32 ounces) chicken broth
  • 1 (15-ounce) can cream-style corn
  • 1 (16-ounce) jar salsa verde
  • 2 (15-ounce) cans great northern beans, drained and rinsed
  • 1 teaspoon salt
  • 1 teaspoon ground cumin
  • 1 teaspoon dried oregano
  • ½ teaspoon ground black pepper
  • ½ teaspoon chili powder
  • ¼ teaspoon cayenne pepper (optional)
  • 8 ounces cream cheese, cut into cubes
  • ½ to 1 cup half & half cream
  • 1 cup fresh cilantro, chopped

Instructions

  1. Boil chicken breasts in salted water until fully cooked, then shred. If using rotisserie chicken, shred and set aside.
  2. In a large soup pot, heat olive oil over medium-high and sauté diced onion and garlic until soft.
  3. Add chicken broth and let it cook for a minute. Stir in cream-style corn and salsa verde, and cook another minute.
  4. Add white beans, salt, cumin, oregano, black pepper, chili powder, and cayenne. Simmer on low for about 5 minutes.
  5. Fold in shredded chicken and stir in cubed cream cheese until melted.
  6. Pour in ½ to 1 cup of half & half, depending on desired creaminess, and stir in chopped cilantro.
  7. Serve hot with toppings like avocado, tortilla chips, cheese, or sour cream.
  8. Slow Cooker: Add all ingredients with precooked chicken to crockpot and cook on low for 3–4 hours, stirring occasionally.

Notes

  • Use rotisserie chicken for faster prep.
  • Adjust spice level with type of salsa verde and cayenne pepper.
  • Can substitute great northern beans with cannellini or navy beans.
  • Freeze leftovers for up to 2 months, though texture may change slightly.
  • To thicken, reduce broth or add cornstarch slurry.
