These patty melts with secret sauce combine juicy beef patties, caramelized onions, melty Swiss and cheddar cheese, and crispy rye bread into the ultimate diner-style sandwich. The tangy, creamy sauce takes them over the top.

Ingredients

  • 1 lb ground beef
  • 1 large onion, thinly sliced
  • 8 slices rye bread
  • 4 slices Swiss cheese
  • 4 slices cheddar cheese
  • Butter, for grilling
  • Salt and pepper, to taste
  • 1/2 cup mayonnaise
  • 2 tablespoons ketchup
  • 1 tablespoon sweet pickle relish
  • 1 teaspoon Worcestershire sauce

Instructions

  1. In a small bowl, mix together mayonnaise, ketchup, sweet pickle relish, and Worcestershire sauce to make the secret sauce. Set aside.
  2. Melt 1 tablespoon butter in a skillet over medium heat. Add sliced onions and cook, stirring occasionally, until deeply caramelized (15–20 minutes). Remove and set aside.
  3. Divide ground beef into 4 thin patties, season with salt and pepper, and shape slightly larger than bread slices.
  4. Cook patties in the same skillet over medium-high heat for 3–4 minutes per side until cooked through. Set aside with the onions.
  5. Butter one side of each slice of rye bread. On a skillet or griddle over medium heat, place 4 slices butter-side down. Top with Swiss cheese, a patty, caramelized onions, cheddar cheese, and another bread slice, butter-side up.
  6. Grill each sandwich 2–3 minutes per side until golden brown and cheese is melted. Let rest briefly before slicing.
  7. Serve hot with secret sauce on the side or drizzled inside the sandwich.

  • Use ground turkey, chicken, or plant-based patties as alternatives.
  • Try sourdough or Texas toast if rye isn’t available.
  • Make caramelized onions ahead to save time.
  • For extra flavor, use pepper jack cheese or add chili flakes to the sauce.
