Ingredients
- 1 cup creamy peanut butter
- 1/4 cup unsalted butter, softened
- 1 tsp vanilla extract
- 1 1/2 cups powdered sugar
- 2 cups Rice Krispies cereal
- 1 1/2 cups semi-sweet chocolate chips (or chopped chocolate)
- Optional: 1 tbsp vegetable shortening or coconut oil (for thinning chocolate)
Instructions
- In a large bowl, cream together peanut butter and softened butter until smooth.
- Stir in vanilla extract.
- Gradually add powdered sugar and mix until well combined and the mixture is firm.
- Fold in Rice Krispies until evenly distributed.
- Shape into 1-tablespoon-sized balls and place on a parchment-lined tray.
- Chill in the refrigerator for at least 30 minutes until firm.
- Melt chocolate (with optional shortening or coconut oil) in a microwave-safe bowl or double boiler until smooth.
- Dip each chilled ball in melted chocolate, let excess drip off, and place back on parchment.
- Refrigerate until chocolate is fully set, about 20–30 minutes.
Notes
- Use crunchy peanut butter for added texture.
- Sprinkle sea salt on top before chocolate sets for contrast.
- Can be frozen for longer storage; thaw in the fridge before serving.
- Dark or milk chocolate can be used depending on preference.
- Use vegan butter and chocolate for a dairy-free version.
