- 1 1/2 cups all-purpose flour
- 1/2 cup unsalted butter, cold and cut into small pieces
- 1/4 teaspoon salt (plus extra for sprinkling)
- 1/4 cup cold water (as needed)
- 2 tablespoons finely chopped green onion
Instructions
- Preheat oven to 400°F (200°C) and line a baking sheet with parchment paper.
- In a mixing bowl, combine flour and salt.
- Add cold butter and use your fingertips or a pastry cutter to blend until mixture resembles coarse crumbs.
- Stir in the chopped green onion.
- Add cold water, 1 tablespoon at a time, until dough just comes together.
- Roll dough very thinly (about 1/16 inch) on a floured surface.
- Cut into squares or rectangles and place on prepared baking sheet.
- Prick each cracker with a fork and sprinkle with salt.
- Bake for 10–12 minutes, or until golden and crisp.
- Let cool completely before serving or storing.

- Add sesame or poppy seeds for extra texture.
- Mix in grated cheddar for a cheesy variation.
- Try garlic powder or smoked paprika for bold flavor.
- Use rosemary or thyme instead of green onion for an herbal twist.
