Instructions

  1. Heat olive oil in a large skillet over medium heat. Add diced onion and garlic, sauté until soft and fragrant (about 3–4 minutes).

  3. Stir in chopped bell peppers with a pinch of salt and pepper. Cook for about 5 minutes until tender.
  4. Add tomato sauce, cumin, paprika, raisins, and olives. Stir to combine.
  5. Simmer the mixture for about 10 minutes, allowing the flavors to meld together.
  6. Taste and adjust seasoning as needed. Serve hot over rice, in tortillas, or as desired.
