Ingredients

  • 1 pound lean ground beef (93%–7% fat)
  • 4 tablespoons smoky barbecue sauce, divided
  • 1 teaspoon salt
  • 1/2 teaspoon black pepper
  • 1 teaspoon garlic powder
  • 1 teaspoon onion powder
  • 4 pineapple rings (fresh or canned, drained)
  • 4 burger buns
  • 1 tablespoon olive oil

Instructions

  1. Preheat the oven to 400°F (200°C) and line a baking sheet with parchment paper.
  2. In a large bowl, mix ground beef with 2 tablespoons of barbecue sauce, salt, pepper, garlic powder, and onion powder until just combined.
  3. Form the beef mixture into 4 equal patties and place on the prepared baking sheet. Brush the tops with olive oil.
  4. Place pineapple rings on the same baking sheet and brush with the remaining 2 tablespoons of barbecue sauce.
  5. Bake for 18–22 minutes, flipping the pineapple halfway through, until burgers are cooked through and pineapple is caramelized.
  6. Let the patties rest for a few minutes, then assemble each burger on a bun with a roasted pineapple ring on top.

  • Use smoky barbecue sauce for extra depth of flavor.
  • Thaw and pat dry frozen pineapple before baking.
