Ingredients
- Brownie layer:
- 1/2 cup unsalted butter, melted
- 1 cup granulated sugar
- 2 large eggs
- 1 teaspoon vanilla extract
- 1/2 cup all-purpose flour
- 1/3 cup unsweetened cocoa powder
- 1/4 teaspoon salt
- Pink cookie dough layer:
- 1/2 cup unsalted butter, softened
- 1/2 cup granulated sugar
- 2 tablespoons milk
- 1 teaspoon vanilla extract
- 1 cup all-purpose flour, heat-treated
- Pink food coloring, as needed
- 1/2 cup mini chocolate chips
- Topping:
- 1/2 cup chocolate chips, melted
Instructions
- Preheat oven to 350°F (175°C) and line a mini muffin pan with paper liners or grease it lightly.
- In a bowl, mix melted butter and sugar until smooth. Add eggs and vanilla and mix well.
- Stir in flour, cocoa powder, and salt just until combined.
- Divide batter into the prepared mini muffin pan. Bake for about 12–15 minutes until set. Let cool completely.
- For the cookie dough, cream softened butter and sugar until smooth. Add milk and vanilla, then stir in heat-treated flour.
- Add a few drops of pink food coloring and fold in mini chocolate chips.
- Once brownies are cool, press about 1 tablespoon of cookie dough on top of each bite.
- Drizzle with melted chocolate and let set before serving.
Notes
- To heat-treat flour: spread on a baking sheet and bake at 300°F for 5–7 minutes, then cool completely.
- Use different food coloring to match holidays or events.
- Brownie bites can be made a day ahead and refrigerated.
- Let sit at room temperature before serving for best texture.
