Ingredients

  • Brownie layer:
  • 1/2 cup unsalted butter, melted
  • 1 cup granulated sugar
  • 2 large eggs
  • 1 teaspoon vanilla extract
  • 1/2 cup all-purpose flour
  • 1/3 cup unsweetened cocoa powder
  • 1/4 teaspoon salt
  • Pink cookie dough layer:
  • 1/2 cup unsalted butter, softened
  • 1/2 cup granulated sugar
  • 2 tablespoons milk
  • 1 teaspoon vanilla extract
  • 1 cup all-purpose flour, heat-treated
  • Pink food coloring, as needed
  • 1/2 cup mini chocolate chips
  • Topping:
  • 1/2 cup chocolate chips, melted

Instructions

  1. Preheat oven to 350°F (175°C) and line a mini muffin pan with paper liners or grease it lightly.
  2. In a bowl, mix melted butter and sugar until smooth. Add eggs and vanilla and mix well.
  3. Stir in flour, cocoa powder, and salt just until combined.
  4. Divide batter into the prepared mini muffin pan. Bake for about 12–15 minutes until set. Let cool completely.
  5. For the cookie dough, cream softened butter and sugar until smooth. Add milk and vanilla, then stir in heat-treated flour.
  6. Add a few drops of pink food coloring and fold in mini chocolate chips.
  7. Once brownies are cool, press about 1 tablespoon of cookie dough on top of each bite.
  8. Drizzle with melted chocolate and let set before serving.

Notes

  • To heat-treat flour: spread on a baking sheet and bake at 300°F for 5–7 minutes, then cool completely.
  • Use different food coloring to match holidays or events.
  • Brownie bites can be made a day ahead and refrigerated.
  • Let sit at room temperature before serving for best texture.
