- 3.4 oz instant pistachio pudding mix
- 3 large eggs
- 1 cup water
- 1/2 cup unsalted butter, melted
- 1/4 cup sour cream
- 1 cup powdered sugar
- 2 tablespoons milk
- 1/2 teaspoon vanilla extract
- 1/4 cup finely chopped pistachios
Instructions
- Preheat the oven to 350°F (175°C). Grease two 8×4-inch loaf pans or line them with parchment paper.
- In a large bowl, combine the yellow cake mix and pistachio pudding mix.
- Add the eggs, water, melted butter, and sour cream.
- Mix with a hand mixer or whisk for about 2 minutes until smooth.
- Divide the batter evenly between the prepared loaf pans.
- Bake for 40–45 minutes until a toothpick inserted in the center comes out clean.
- Allow the bread to cool in the pans for 10 minutes.
- Transfer the loaves to a wire rack and cool completely.
- In a small bowl, whisk together powdered sugar, milk, and vanilla extract to make the glaze.
- Drizzle the glaze over the cooled loaves.
- Sprinkle chopped pistachios on top and allow the glaze to set before slicing.
Notes
- Adding pudding mix helps create a moist and tender texture.
- You can substitute melted butter with vegetable oil if desired.
- Chocolate chips can be added to the batter for a sweeter variation.
- Add a small amount of almond extract to enhance the nutty flavor.
- The bread slices best once fully cooled.
