Ingredients

Vegetable or olive oil

Leek, cleaned and chopped

Carrots, shaved or chopped

Garlic cloves, minced

Shiitake mushroom caps, thinly sliced

Baby bok choy, stems and leaves separated and chopped

Lite soy sauce

Chicken or vegetable broth

Sesame oil

Better Than Bouillon (optional)

Frozen potstickers, wontons, or dumplings (no need to thaw)

Green onions, thinly sliced

Sesame seeds, for topping

Instructions

  1. Heat oil in a large pot over medium heat until shimmering.
  2. Sauté leeks, carrots, garlic, mushrooms, and bok choy stems for about 5 minutes until soft.
  3. Stir in soy sauce, broth, sesame oil, and bouillon if using; bring to a gentle boil.
  4. Add frozen potstickers and cook according to package directions, usually a few minutes.
  5. Reduce heat and stir in bok choy leaves and most of the green onions.
  6. Serve hot, garnished with sesame seeds and remaining green onions.
