- 500 g boneless chicken breast, finely chopped or shredded
- 1 teaspoon salt
- 1 teaspoon paprika
- 1/2 teaspoon black pepper
- 1 teaspoon garlic powder
- 1 teaspoon onion powder
- 1 tablespoon vegetable oil
- 1 small onion, finely chopped
- 1/2 cup sweet corn (optional)
- 1/2 cup chopped bell peppers
- 1/2 cup shredded mozzarella cheese
- 2 tablespoons butter
- 2 tablespoons all-purpose flour
- 1 1/2 cups milk
- 1/2 teaspoon salt (for sauce)
- 1/4 teaspoon black pepper (for sauce)
- 1 cup shredded cheddar cheese
- 3 cups all-purpose flour
- 1 tablespoon sugar
- 1 teaspoon salt (for dough)
- 2 teaspoons instant yeast
- 1 cup warm milk
- 2 tablespoons vegetable oil
- 1 large egg
- 1 egg yolk
- 1 tablespoon milk (for brushing)
Instructions
- In a bowl combine flour, sugar, salt, and instant yeast. Add warm milk, oil, and egg and mix until a soft dough forms.
- Knead the dough for 8–10 minutes until smooth and elastic. Cover and let it rise for about 1 hour until doubled.
- Heat vegetable oil in a pan and sauté the chopped onion until soft.
- Add chicken, salt, paprika, black pepper, garlic powder, and onion powder. Cook until the chicken is fully cooked.
- Stir in bell peppers and corn and cook for another 2–3 minutes. Remove from heat.
- In a saucepan melt butter over medium heat. Stir in flour and cook for 1 minute.
- Gradually whisk in milk and cook until the sauce thickens.
- Add salt, black pepper, and cheddar cheese, stirring until smooth and melted.
- Mix the chicken filling with half of the cheese sauce and mozzarella cheese. Let it cool slightly.
- Punch down the risen dough and divide into equal portions.
- Flatten each dough piece and place a spoonful of filling in the center.
- Seal the dough around the filling and shape into buns. Place seam-side down on a lined baking tray.
- Cover and let the buns rise again for about 20 minutes.
- Brush with egg yolk mixed with milk.
- Bake in a preheated oven at 180°C (350°F) for 18–22 minutes until golden brown.
- Serve warm and drizzle with remaining cheese sauce if desired.
Notes
- Allow the filling to cool slightly before stuffing to prevent the dough from becoming sticky.
- Add diced jalapeños or chili flakes for a spicy version.
- Small cubes of mozzarella inside the buns create a stretchy cheesy center.
- Brush baked buns with garlic butter for extra flavor.
- Buns can be frozen for up to 2 months and reheated in the oven.
