Instructions
- Bake red velvet cake (or use leftovers) and let cool completely. Crumble into fine crumbs.
- In a bowl, beat cream cheese, sugar, and vanilla until smooth.
- Form the mixture into 1-tablespoon-sized balls and place on a parchment-lined baking sheet.
- Chill the cheesecake balls for 30 minutes in the refrigerator.
- Roll each ball in red velvet cake crumbs until fully coated.
- Refrigerate the coated bites for another 30 minutes before serving.

- Add mini chocolate chips or lemon zest to the cream cheese mixture for variation.
- Drizzle with melted white chocolate for a festive look.
