Ingredients
2 oz light or white rum
1 oz simple syrup or sugar (adjust to taste)
1 oz fresh lime juice
1 1/2 cups ice
1/2 cup strawberries (fresh or frozen)
1/2 cup coconut sorbet or honeydew melon (or lime daiquiri mix) for white layer
1 oz blue curacao or blue passionfruit liqueur for blue layer
Optional garnish: fresh or frozen blueberries
Instructions
- Blend rum, simple syrup, lime juice, and ice until smooth. Pour half into a container and freeze briefly to firm up.
- Add strawberries to the remaining lime mixture and blend until smooth and bright red. Pour this red layer into serving glasses.
- Blend coconut sorbet or honeydew melon with rum and ice to create a creamy white layer. Spoon gently over the red layer.
- Rinse blender, then combine blue curacao, lime juice, rum, sugar, and ice. Blend until slushy and blue. Layer gently on top of the white layer.
- Garnish with blueberries if desired and serve immediately before layers blend.
Notes
- Scale ingredients to serve more guests.
- Swap white layer with pineapple or classic lime daiquiri mix.
- Make a non-alcoholic version by omitting rum or using a citrus mocktail base.
- Try different berries or fruits for the red layer to vary flavors.
- Prepare and freeze layers ahead; thaw slightly before assembling.
- If no blue curacao, use blue food coloring with triple sec or blue raspberry syrup.
