Ritz S’mores Cracker Cookies are an easy, no-bake treat featuring Ritz crackers filled with marshmallow crème, dipped in chocolate almond bark, and topped with graham crumbs, marshmallow bits, and chocolate chips. All the flavor of s’mores—without the campfire.

Ingredients

  • 48 Ritz Crackers
  • 7 oz marshmallow crème
  • 24 oz chocolate almond bark
  • 1 cup crushed graham crackers
  • Marshmallow bits (optional)

Instructions

  1. Melt the chocolate almond bark in the microwave in 30-second intervals, stirring until smooth.
  2. Line a baking sheet with parchment or wax paper.
  3. Place 24 Ritz crackers on the tray and spoon 1–2 teaspoons of marshmallow crème onto each.
  4. Top with the remaining 24 crackers to make sandwiches.
  5. Dip each sandwich in the melted chocolate, fully coating it. Shake off excess gently.
  6. Place dipped sandwiches on the prepared tray and immediately sprinkle with crushed graham crackers, marshmallow bits, and mini chocolate chips.
  7. Let sit at room temperature or refrigerate until the chocolate sets completely.
