Sandwich Crust Garlic Rolls are a clever, budget-friendly snack that transforms leftover bread crusts into crispy, buttery, cheesy garlic spirals perfect as a side dish, appetizer, or after-school treat.

  • Total Time: 25 minutes
  • Yield: 4 servings (about 12 rolls)

Ingredients

  • 12 sandwich bread crusts (from about 68 slices of bread)
  • 3 tablespoons unsalted butter, melted
  • 2 tablespoons olive oil
  • 3 cloves garlic, finely minced
  • 1 tablespoon fresh parsley, finely chopped
  • 1/2 teaspoon salt
  • 1/4 teaspoon black pepper
  • 1/2 teaspoon Italian seasoning
  • 1 cup shredded mozzarella cheese
  • 1/4 cup grated Parmesan cheese

Instructions

  1. Preheat oven to 375°F (190°C) and line a baking sheet with parchment paper.
  2. In a small bowl, combine melted butter, olive oil, minced garlic, parsley, salt, pepper, and Italian seasoning.
  3. Lay sandwich crust strips on a clean surface and trim if needed for even rolling.
  4. Brush each crust strip lightly with the garlic butter mixture.
  5. Sprinkle mozzarella and Parmesan along one side of each strip.
  6. Roll each strip tightly into a spiral and place seam-side down on the prepared baking sheet.
  7. Brush tops with remaining garlic butter and sprinkle with extra cheese.
  8. Bake for 12–15 minutes until golden brown and cheese is melted.
  9. Broil for 1–2 minutes for extra crispiness, watching carefully to avoid burning.
  10. Serve warm with marinara sauce or your favorite dipping sauce.

Notes

  • Place rolls seam-side down to prevent unrolling.
  • Avoid overfilling with cheese to help rolls hold their shape.
  • Fresh garlic provides the best flavor, but pre-minced can be used.
  • For extra crispiness, finish with a brief broil.
  • Whole wheat crusts can be used for added flavor.
