Instructions
- Heat olive oil in a large skillet over medium heat.
- Add onion and garlic; sauté until softened and fragrant.
- Add ground beef, breaking it apart as it browns. Season with salt and pepper.
- Stir in diced potatoes and pour in beef broth. Cover and simmer, stirring occasionally, until potatoes are tender (about 20 minutes).
- Optional: Transfer to a baking dish, top with shredded cheese, and bake at 375°F (190°C) for 10 minutes until melted and bubbly.
