Ingredients

  • 1 pound raw shrimp, peeled and deveined
  • 1/2 cup breadcrumbs
  • 1/4 cup fresh cilantro, chopped
  • 1/4 cup green onions, chopped
  • 1 large egg
  • 1 teaspoon garlic powder
  • 1/2 teaspoon paprika
  • 1/2 teaspoon salt
  • 1/4 teaspoon black pepper
  • 1 tablespoon olive oil (for cooking)
  • 2 ripe avocados
  • 1 lime, juiced
  • 1/4 teaspoon salt
  • 1/4 cup diced tomatoes
  • 1/4 cup red onion, finely chopped
  • 1 tablespoon fresh cilantro, chopped

Instructions

  1. Pulse shrimp in a food processor until coarsely chopped. Transfer to a large bowl.
  2. Add breadcrumbs, cilantro, green onions, egg, garlic powder, paprika, salt, and pepper. Mix until well combined.
  3. Shape the mixture into patties about 1/2 inch thick.
  4. Heat olive oil in a skillet over medium heat. Cook patties for 3–4 minutes per side, until golden brown and cooked through.
  5. Meanwhile, mash avocados in a bowl and stir in lime juice, salt, diced tomatoes, red onion, and cilantro to make guacamole.
  6. Serve shrimp patties on buns or in lettuce wraps topped with guacamole.

Notes

  • Let patties chill for 10–15 minutes before cooking to help them hold shape.
  • Use gluten-free breadcrumbs for a gluten-free version.
  • Guacamole is best made fresh; store with plastic wrap pressed on the surface to prevent browning.
