Ingredients
- 1 pound raw shrimp, peeled and deveined
- 1/2 cup breadcrumbs
- 1/4 cup fresh cilantro, chopped
- 1/4 cup green onions, chopped
- 1 large egg
- 1 teaspoon garlic powder
- 1/2 teaspoon paprika
- 1/2 teaspoon salt
- 1/4 teaspoon black pepper
- 1 tablespoon olive oil (for cooking)
- 2 ripe avocados
- 1 lime, juiced
- 1/4 teaspoon salt
- 1/4 cup diced tomatoes
- 1/4 cup red onion, finely chopped
- 1 tablespoon fresh cilantro, chopped
Instructions
- Pulse shrimp in a food processor until coarsely chopped. Transfer to a large bowl.
- Add breadcrumbs, cilantro, green onions, egg, garlic powder, paprika, salt, and pepper. Mix until well combined.
- Shape the mixture into patties about 1/2 inch thick.
- Heat olive oil in a skillet over medium heat. Cook patties for 3–4 minutes per side, until golden brown and cooked through.
- Meanwhile, mash avocados in a bowl and stir in lime juice, salt, diced tomatoes, red onion, and cilantro to make guacamole.
- Serve shrimp patties on buns or in lettuce wraps topped with guacamole.
Notes
- Let patties chill for 10–15 minutes before cooking to help them hold shape.
- Use gluten-free breadcrumbs for a gluten-free version.
- Guacamole is best made fresh; store with plastic wrap pressed on the surface to prevent browning.
- Reheat patties in a skillet or oven until warmed through.
- Great with sweet potato fries, salad, or corn on the cob.
