Ingredients
- Chocolate Chip Cookie Layer:
- 3/4 cup unsalted butter, softened
- 1/2 cup brown sugar
- 1/2 cup white sugar
- 1 large egg
- 1 large egg yolk
- 1 teaspoon vanilla extract
- 1 1/2 cups all-purpose flour
- 1/4 teaspoon salt
- 2/3 cup chocolate chips
- Oreo Layer:
- 28 Oreo cookies
- Brownie Layer:
- 1/2 cup unsalted butter
- 6 ounces dark or semi-sweet chocolate, chopped
- 1 cup granulated sugar
- 2 large eggs
- 1/2 cup all-purpose flour
- 1/4 cup cocoa powder
- 1/2 teaspoon salt
Instructions
- Preheat the oven to 350°F (180°C) and line a 9×13-inch baking pan with parchment paper, leaving an overhang for easy removal.
- Make the Cookie Layer: Beat the softened butter with brown and white sugar until combined. Mix in the egg, egg yolk, and vanilla. Gradually add flour and salt, then stir in chocolate chips. Press the dough evenly into the bottom of the prepared pan.
- Add the Oreo Layer: Place Oreo cookies in a single layer over the cookie dough, gently pressing them down.
- Make the Brownie Layer: Melt butter and chopped chocolate together until smooth. Let cool slightly, then whisk in sugar and eggs. Stir in flour, cocoa powder, and salt until just combined.
- Spoon brownie batter over the Oreo layer and smooth the top.
- Bake for 40–50 minutes, or until the top is set and a toothpick comes out with a few moist crumbs.
- Allow the brownies to cool completely in the pan (at least 4 hours) before lifting out and slicing.
Notes
- Use flavored Oreos (like mint or peanut butter) for variation.
- Chopped nuts can be added to the brownie layer for extra crunch.
- Cool completely before slicing for defined layers.
- These brownies are best made a day ahead for clean slicing.
