Snickerdoodle Cobbler is a cozy, crowd-pleasing dessert that combines the spiced sweetness of snickerdoodle cookies with gooey apple pie filling. Topped with caramel and cinnamon sugar, it’s best served warm with ice cream.

  • Total Time: 45 minutes
  • Yield: 9 servings

Ingredients

1 (17.5 oz) package snickerdoodle cookie mix

1/2 cup (1 stick) salted butter, softened

1 large egg

1 (21 oz) can apple pie filling

3 tablespoons caramel topping

2 teaspoons cinnamon sugar

Instructions

  1. Preheat oven to 375°F (190°C) and lightly grease an 8-inch baking dish.
  2. In a bowl, combine snickerdoodle cookie mix, softened butter, and egg until a dough forms.
  3. Drop half of the dough in spoonfuls across the bottom of the dish. Sprinkle with 1 teaspoon of cinnamon sugar.
  4. Spread the apple pie filling evenly over the dough layer.
  5. Drop remaining dough in spoonfuls over the apple layer.
  6. Sprinkle the remaining 1 teaspoon of cinnamon sugar on top and drizzle with caramel sauce.
  7. Bake for 30–35 minutes or until golden brown and bubbly around the edges.
  8. Let cool slightly and serve warm, optionally with vanilla ice cream.

Notes

  • Try with peach or cherry pie filling for a different flavor.
  • If no caramel sauce is available, use maple syrup or powdered sugar as a substitute.
  • Add a dash of nutmeg or allspice for extra warmth.
  • Homemade sugar cookie dough with cinnamon sugar can replace cookie mix.
  • Reheat leftovers in the microwave or oven for best results.
