Ingredients
- 2 lbs (900 g) 80/20 ground chuck
- 2 large white onions, diced
- 2 jalapeños, seeded and sliced into rings
- 12 slices Texas toast bread
- 8 slices Colby Jack cheese
- 4 tablespoons unsalted butter
- 1 tablespoon olive oil
- 1 teaspoon salt
- 1 teaspoon black pepper
- 1 teaspoon garlic powder
- 1 teaspoon smoked paprika
- 1/2 cup mayonnaise (optional sauce)
- 2 tablespoons ketchup (optional sauce)
- 1 tablespoon mustard (optional sauce)
- 1 teaspoon hot sauce (optional sauce)
Instructions
- Heat olive oil in a large skillet over medium heat and add the diced onions.
- Cook the onions for 15–20 minutes, stirring occasionally, until soft and caramelized. Remove from the pan and set aside.
- In the same skillet, cook the sliced jalapeños for 2–3 minutes until lightly charred, then remove and set aside.
- In a large bowl, combine ground chuck, salt, black pepper, garlic powder, and smoked paprika. Mix gently.
- Form the beef mixture into 6 thin oval patties roughly the size of the Texas toast slices.
- Cook the patties in the skillet over medium-high heat for 3–4 minutes per side until browned and cooked through. Remove and keep warm.
- Spread butter on one side of each slice of Texas toast.
- Place the bread butter-side down on a skillet or griddle and toast lightly until golden.
- Place one slice of cheese on the toasted bread, add a cooked beef patty, caramelized onions, and jalapeños.
- Add another slice of cheese and top with another slice of Texas toast.
- Cook the assembled sandwiches over medium heat for 2–3 minutes per side until the bread is crispy and the cheese is melted.
- For the optional sauce, mix mayonnaise, ketchup, mustard, and hot sauce in a small bowl.
- Slice the sandwiches in half and serve hot with the sauce if desired.

- Use 80/20 ground beef for juicy and flavorful patties.
- Cook onions slowly to achieve deep caramelized flavor.
- Toast the bread before assembling to prevent sogginess.
- Pepper jack or cheddar cheese can replace Colby Jack for extra flavor.
