Ingredients

  • 2 cups fresh pineapple, finely diced
  • 23 fresh jalapeños, thinly sliced (seeds removed for less heat)
  • 3 tablespoons red chili flakes or chili paste (adjust to taste)
  • 1/2 cup finely chopped red onion
  • 2 cloves garlic, minced
  • 1 tablespoon freshly grated ginger
  • 1/4 cup apple cider vinegar
  • 1/4 cup brown sugar
  • 1/2 teaspoon salt
  • 1/4 teaspoon black pepper
  • 2 tablespoons fresh lime juice
  • 2 tablespoons chopped fresh cilantro

Instructions

  1. Finely dice pineapple, slice jalapeños, and mince garlic and ginger.
  2. In a medium saucepan over medium heat, combine pineapple, red onion, jalapeños, garlic, and ginger.
  3. Stir in apple cider vinegar, brown sugar, chili flakes or paste, salt, and black pepper.
  4. Bring to a gentle simmer, stirring occasionally until sugar dissolves.
  5. Reduce heat to low and simmer for 15–20 minutes, stirring occasionally, until slightly thickened and pineapple softens.
  6. Remove from heat and stir in fresh lime juice and chopped cilantro.
  7. Cool completely before serving to allow flavors to develop.
