Ingredients
- 4 oz lo mein noodles
- 2 tbsp butter
- ¼ tsp crushed red pepper
- 2 large eggs
- 1 tbsp brown sugar
- 1 tbsp soy sauce
- 2 tbsp sriracha
- 1 green onion, sliced
- 1 handful fresh cilantro (optional, for garnish)
Instructions
- In a small bowl, mix brown sugar, soy sauce, and sriracha to make the sauce.
- Cook lo mein noodles in boiling water for 3–4 minutes until tender. Drain and set aside.
- Whisk eggs in a small bowl. In a skillet, melt butter over medium heat, add crushed red pepper, and pour in eggs. Scramble until soft and set.
- Add noodles to the skillet with eggs. Pour the sauce over and toss until well coated.
- Serve hot, garnished with green onion and cilantro if desired.
Notes
- Swap lo mein noodles for rice noodles, ramen, or spaghetti.
- Add shrimp, chicken, or tofu for extra protein.
- Toss in veggies like bell peppers, spinach, or carrots for more nutrition.
- Reduce sriracha for a milder version or add more for extra heat.
