Ingredients
- 4 boneless, skinless chicken breasts
- 1 cup fresh spinach, chopped
- 1/2 cup feta cheese, crumbled
- 2 cloves garlic, minced
- 2 tablespoons cream cheese
- 1 tablespoon olive oil
- 1 teaspoon paprika
- 1/2 teaspoon dried oregano
- 1/2 teaspoon salt
- 1/4 teaspoon black pepper
- 1 tablespoon lemon juice
- Toothpicks or kitchen twine
Instructions
- Preheat oven to 180°C (350°F) and lightly grease a baking dish.
- Butterfly each chicken breast by slicing horizontally without cutting all the way through.
- In a bowl, mix spinach, feta cheese, garlic, cream cheese, and lemon juice until well combined.
- Spoon the filling evenly onto each chicken breast.
- Roll each breast tightly and secure with toothpicks or kitchen twine.
- Rub each roll with olive oil and season with paprika, oregano, salt, and black pepper.
- Place rolls seam-side down in the baking dish.
- Bake for 25–30 minutes until fully cooked and no longer pink inside.
- Let rest for 5 minutes, then remove toothpicks or twine before serving.
Notes
- Squeeze excess moisture from spinach if using frozen.
- Roll chicken tightly to prevent filling from leaking.
- Use a meat thermometer to ensure chicken reaches 75°C (165°F).
- Let the chicken rest before slicing to retain juices.
- Can be prepared ahead and baked later.
