Ingredients

  • 4 boneless, skinless chicken breasts
  • 1 cup fresh spinach, chopped
  • 1/2 cup feta cheese, crumbled
  • 2 cloves garlic, minced
  • 2 tablespoons cream cheese
  • 1 tablespoon olive oil
  • 1 teaspoon paprika
  • 1/2 teaspoon dried oregano
  • 1/2 teaspoon salt
  • 1/4 teaspoon black pepper
  • 1 tablespoon lemon juice
  • Toothpicks or kitchen twine

Instructions

  1. Preheat oven to 180°C (350°F) and lightly grease a baking dish.
  2. Butterfly each chicken breast by slicing horizontally without cutting all the way through.
  3. In a bowl, mix spinach, feta cheese, garlic, cream cheese, and lemon juice until well combined.
  4. Spoon the filling evenly onto each chicken breast.
  5. Roll each breast tightly and secure with toothpicks or kitchen twine.
  6. Rub each roll with olive oil and season with paprika, oregano, salt, and black pepper.
  7. Place rolls seam-side down in the baking dish.
  8. Bake for 25–30 minutes until fully cooked and no longer pink inside.
  9. Let rest for 5 minutes, then remove toothpicks or twine before serving.

  • Roll chicken tightly to prevent filling from leaking.
  • Use a meat thermometer to ensure chicken reaches 75°C (165°F).
