- 1/2 cup rolled oats
- 1 cup almond flour
- 1/4 cup cream cheese, softened
- 1/4 cup plain Greek yogurt
- 1/3 cup freeze-dried strawberries, finely crushed
- 2 tablespoons honey or maple syrup
- 1 scoop (about 2 tablespoons) vanilla protein powder
- 1/2 teaspoon vanilla extract
- 1–2 tablespoons milk of choice (as needed)
- 2 tablespoons finely diced fresh strawberries
Instructions
- Pulse rolled oats in a food processor until they reach a fine flour-like consistency.
- In a large bowl, combine oat flour and almond flour.
- Add softened cream cheese and Greek yogurt, stirring until partially combined.
- Mix in crushed freeze-dried strawberries, diced fresh strawberries, protein powder, honey (or maple syrup), and vanilla extract.
- Stir until a thick dough forms. Add milk 1 tablespoon at a time if needed to achieve a rollable texture.
- Scoop about 1 tablespoon of mixture and roll into balls.
- Place on a lined tray and refrigerate for at least 30 minutes to firm.
- Serve chilled or store for later.
Notes
- If mixture is too sticky, add extra almond flour or chill before rolling.
- Use certified gluten-free oats if needed.
- Store refrigerated up to 5 days or freeze up to 2 months.
- Best enjoyed chilled for firm texture.
- Protein powder can be omitted; add extra almond flour if needed.
