- 2 ¼ cups all-purpose flour

- 3 tablespoons powdered sugar

- ¼ cup crushed graham crackers or cookies (optional)
- ¼ cup white chocolate chips (optional)
Instructions
- In a small bowl, mix cream cheese, powdered sugar, and vanilla extract until smooth. Scoop teaspoon-sized portions onto a baking sheet and freeze for about 30 minutes.
- In another bowl, whisk together flour, baking powder, baking soda, and salt. Set aside.
- In a large bowl, beat softened butter, granulated sugar, and brown sugar until light and creamy. Add the egg and vanilla extract and mix until combined.
- Gradually add the dry ingredients to the wet mixture and stir until just combined.
- Gently fold in the chopped strawberries or strawberry jam and optional white chocolate chips.
- Scoop out about 2 tablespoons of cookie dough, flatten slightly, and place a frozen cheesecake ball in the center. Top with another small portion of dough and seal the edges.
- Place the filled cookies on a parchment-lined baking sheet and chill for 20 minutes.
- Preheat oven to 350°F (175°C). Bake for 13–16 minutes, until edges are golden and centers look set.
- Let cookies cool on the baking sheet for 5 minutes before transferring to a wire rack.
