- 2 cups all-purpose flour

- 6 ounces cream cheese, softened
- 1/4 cup powdered sugar
- 1 teaspoon lemon juice
- 1/2 teaspoon vanilla extract (for filling)
- 1 cup powdered sugar (for glaze)
- 2–3 tablespoons crushed strawberry purée
- 1 teaspoon milk (optional, for glaze consistency)
Instructions
- Preheat oven to 350°F (175°C) or heat oil to 350°F for frying.
- Whisk flour, sugar, baking powder, and salt in a bowl.
- In another bowl, mix milk, melted butter, egg, and vanilla extract.
- Combine wet and dry ingredients, then fold in chopped strawberries.
- Spoon batter into greased donut pan, filling each about 3/4 full.
- Bake for 10–12 minutes or fry spoonfuls of batter until golden and cooked through.
- Cool donuts on a wire rack.
- In a bowl, beat cream cheese, powdered sugar, lemon juice, and vanilla until smooth.
- Fill a piping bag with cheesecake mixture and pipe into each donut.
- Whisk powdered sugar with strawberry purée (and milk if needed) to make the glaze.
- Dip each donut in the glaze and let it set before serving.
Notes
- Don’t overmix the batter to keep the donuts soft and fluffy.
- Use a small piping tip to gently fill donuts without tearing them.
- Thaw and drain frozen strawberries if using to avoid extra moisture.
- Top with graham cracker crumbs for a more cheesecake-inspired finish.
- Bake ahead but fill and glaze just before serving for best results.
