Ingredients

  • 2 cups all-purpose flour
  • 1/4 cup granulated sugar
  • 2 teaspoons baking powder
  • 1/2 teaspoon salt
  • 1/2 cup milk
  • 1/4 cup melted butter
  • 1 large egg
  • 1 teaspoon vanilla extract
  • 1/2 cup finely chopped strawberries
  • 6 ounces cream cheese, softened
  • 1/4 cup powdered sugar
  • 1 teaspoon lemon juice
  • 1/2 teaspoon vanilla extract (for filling)
  • 1 cup powdered sugar (for glaze)
  • 23 tablespoons crushed strawberry purée
  • 1 teaspoon milk (optional, for glaze consistency)

Instructions

  1. Preheat oven to 350°F (175°C) or heat oil to 350°F for frying.
  2. Whisk flour, sugar, baking powder, and salt in a bowl.
  3. In another bowl, mix milk, melted butter, egg, and vanilla extract.
  4. Combine wet and dry ingredients, then fold in chopped strawberries.
  5. Spoon batter into greased donut pan, filling each about 3/4 full.
  6. Bake for 10–12 minutes or fry spoonfuls of batter until golden and cooked through.
  7. Cool donuts on a wire rack.
  8. In a bowl, beat cream cheese, powdered sugar, lemon juice, and vanilla until smooth.
  9. Fill a piping bag with cheesecake mixture and pipe into each donut.
  10. Whisk powdered sugar with strawberry purée (and milk if needed) to make the glaze.
  11. Dip each donut in the glaze and let it set before serving.

Notes

  • Don’t overmix the batter to keep the donuts soft and fluffy.
  • Use a small piping tip to gently fill donuts without tearing them.
  • Thaw and drain frozen strawberries if using to avoid extra moisture.
