Ingredients

4 large eggs, room temperature

3/4 cup (150 g) granulated sugar

1 teaspoon vanilla extract

3/4 cup all-purpose flour

1 teaspoon baking powder

1/4 teaspoon salt

Powdered sugar, for dusting

8 oz cream cheese, softened

1/4 cup granulated sugar (for filling)

1 teaspoon vanilla extract (for filling)

1 cup heavy whipping cream

1 cup chopped fresh strawberries

Instructions

  1. Preheat oven to 350°F (175°C) and line a 10×15-inch jelly roll pan with parchment paper.
  2. In a large bowl, beat the eggs on high speed for 4-5 minutes until thick and pale.
  3. Gradually add 3/4 cup granulated sugar and 1 teaspoon vanilla extract to the eggs.
  4. Sift flour, baking powder, and salt together, and gently fold into the egg mixture until just combined.
  5. Spread the batter evenly in the prepared pan and bake for 10-12 minutes until the top springs back when touched.
  6. Dust a clean kitchen towel with powdered sugar. Invert the warm cake onto the towel, peel off parchment, and roll up with the towel inside. Let cool completely.
  7. For the filling, beat cream cheese, 1/4 cup sugar, and vanilla until smooth.
  8. Whip heavy cream to stiff peaks and fold into the cream cheese mixture. Gently fold in chopped strawberries.
  9. Unroll the cooled cake, spread the filling evenly, and re-roll the cake without the towel.
  10. Chill for at least 1 hour before serving. Dust with powdered sugar if desired.
