Ingredients

  • 2 large onions (white or yellow)
  • 2430 mozzarella cheese sticks or strips
  • 2030 pepperoni slices
  • 1 cup all-purpose flour
  • 23 eggs, beaten
  • 2 cups breadcrumbs
  • Oil for frying (or cooking spray for baking/air frying)

Instructions

  1. Peel onions and slice into ½–¾ inch thick rings. Separate and pair rings to create gaps for filling.
  2. Fill gaps with mozzarella strips and tuck in 1–2 pepperoni slices.
  3. Freeze the stuffed rings for 20–30 minutes to firm up.
  4. Coat each ring in flour, then dip in beaten eggs, and coat with breadcrumbs.
  5. Heat oil to 350°F (175°C) and fry rings for 2–3 minutes per side until golden.
  6. Drain on paper towels or a cooling rack and serve warm with marinara sauce.

Notes

  • Freeze rings before frying to prevent cheese from leaking.
