Ingredients
- 1 cup salted butter, softened
- ½ cup granulated sugar
- ½ cup powdered sugar
- 1 egg
- 1 tsp vanilla extract
- ¼ tsp almond extract
- 2 ⅓ cups all-purpose flour
- 1 cup almond flour
- ¼ tsp salt
- ½ cup plum jam (or preferred jam)
- Additional powdered sugar, for dusting
Instructions
- Preheat oven to 350°F (175°C) and line a baking sheet with parchment paper or a silicone baking mat.
- Cream together softened butter, granulated sugar, and powdered sugar until smooth.
- Add egg, vanilla, and almond extract; mix until combined.
- Add all-purpose flour, almond flour, and salt; mix until dough forms.
- Roll dough on a floured surface to ¼ inch thickness.
- Cut out equal numbers of full cookies and top cookies with cut-out centers using Linzer cutters.
- Place cookies on prepared baking sheet and bake for 7–9 minutes until puffed and set.
- Let cookies cool completely. Spread jam on bottom cookies, dust tops with powdered sugar, and sandwich together.
