Ingredients

  • 1 lb thick-cut smoked beef strips, chopped
  • 1 medium onion, finely diced
  • 3 cloves garlic, minced
  • 1/2 cup brown sugar, packed
  • 1/4 cup pure maple syrup
  • 1/3 cup apple cider vinegar
  • 1/4 cup brewed coffee
  • 1 tablespoon honey
  • 1 teaspoon chili flakes (adjust to taste)
  • 1/2 teaspoon smoked paprika
  • 1/4 teaspoon black pepper
  • 1 tablespoon olive oil

Instructions

  1. Heat a large skillet over medium heat. Add chopped smoked beef strips and cook until browned and slightly crisp. Remove with a slotted spoon, leaving about 1 tablespoon of rendered fat in the pan.
  2. Add olive oil if needed. Stir in diced onion and cook over medium-low heat for 8–10 minutes until soft and caramelized.
  3. Add minced garlic and cook for 30 seconds until fragrant.
  4. Stir in brown sugar, maple syrup, honey, apple cider vinegar, and brewed coffee. Mix well.
  5. Return the cooked beef to the pan. Add chili flakes, smoked paprika, and black pepper.
  6. Reduce heat to low and simmer gently for 20–30 minutes, stirring occasionally, until thick and jam-like.
  7. Remove from heat and cool slightly. Pulse in a food processor for a smoother texture if desired.
  8. Cool completely before transferring to a jar or airtight container.
