1 medium (10–12 oz) English cucumber, chilled
2 to 3 rolls strawberry-flavored Fruit by the Foot or natural fruit leather alternative
1 teaspoon chamoy sauce
1/2 teaspoon Tajín seasoning, plus more to taste
Instructions
- Unroll the Fruit by the Foot from its paper backing. With the sticky side facing the cucumber, wrap it around from one end to the other, slightly overlapping. Use as many rolls as needed to cover the cucumber completely.
- Drizzle chamoy evenly over the wrapped cucumber and spread it with your fingers or a pastry brush.
- Sprinkle Tajín evenly across the chamoy-covered cucumber, starting with about 1/2 teaspoon and adjusting to taste.
- Slice the cucumber into 1/4-inch-thick coins using a sharp knife.
- Arrange the coins on a plate, sprinkle with more Tajín if desired, and serve immediately.
Notes
- Swap strawberry fruit leather for mango or pineapple flavor for variety.
- Use spicy chamoy or add chili powder for extra heat.
- For a lighter version, skip the fruit leather and drizzle cucumber slices directly with chamoy and Tajín.
- Best enjoyed fresh—assemble right before serving to prevent sogginess.
