Ingredients
- 2 tablespoons butter
- 1 medium onion, chopped
- 1 pound lean ground beef
- ½ teaspoon Italian seasoning
- 2 tablespoons tomato paste
- 2 tablespoons all-purpose flour
- 1½ cups beef broth
- 1 tablespoon Worcestershire sauce
- ½ teaspoon salt
- 2 cups frozen mixed vegetables (carrots, peas, corn, green beans)
- 32 ounces frozen tater tots
Instructions
- Preheat oven to 375°F (190°C) and position rack in the top third of the oven.
- In a large oven-safe skillet, melt butter over medium-high heat. Sauté onion until softened, about 5 minutes.
- Add ground beef and cook until just browned, about 6–8 minutes.
- Reduce heat to medium. Stir in Italian seasoning, tomato paste, and flour. Cook 1 minute, stirring constantly.
- Pour in beef broth and Worcestershire sauce, scraping the bottom. Let the sauce thicken slightly (1 minute). Add salt.
- Stir in frozen vegetables and cook for 3 minutes until heated through. Add extra broth if needed.
- If not using an oven-safe skillet, transfer mixture to a 9×13-inch casserole dish. Spread evenly.
- Arrange tater tots in a single layer on top of the filling.
- Bake uncovered for 40 minutes or until bubbly and golden. Broil briefly at the end for extra crispiness if desired.
Notes
- Substitute ground lamb for a traditional version.
- Use fresh veggies; sauté them with onions first.
- Sprinkle cheese over the tater tots before the last 10-15 minutes of baking.
- Replace some broth with red wine for deeper flavor.
- Reheat in oven or air fryer for best texture.
