Ingredients

  • 2 tablespoons butter
  • 1 medium onion, chopped
  • 1 pound lean ground beef
  • ½ teaspoon Italian seasoning
  • 2 tablespoons tomato paste
  • 2 tablespoons all-purpose flour
  • 1½ cups beef broth
  • 1 tablespoon Worcestershire sauce
  • ½ teaspoon salt
  • 2 cups frozen mixed vegetables (carrots, peas, corn, green beans)
  • 32 ounces frozen tater tots

Instructions

  1. Preheat oven to 375°F (190°C) and position rack in the top third of the oven.
  2. In a large oven-safe skillet, melt butter over medium-high heat. Sauté onion until softened, about 5 minutes.
  3. Add ground beef and cook until just browned, about 6–8 minutes.
  4. Reduce heat to medium. Stir in Italian seasoning, tomato paste, and flour. Cook 1 minute, stirring constantly.
  5. Pour in beef broth and Worcestershire sauce, scraping the bottom. Let the sauce thicken slightly (1 minute). Add salt.
  6. Stir in frozen vegetables and cook for 3 minutes until heated through. Add extra broth if needed.
  7. If not using an oven-safe skillet, transfer mixture to a 9×13-inch casserole dish. Spread evenly.
  8. Arrange tater tots in a single layer on top of the filling.
  9. Bake uncovered for 40 minutes or until bubbly and golden. Broil briefly at the end for extra crispiness if desired.
