Instructions
- Heat vegetable oil in a skillet over medium heat.
- Add garlic and ginger; sauté for 30 seconds until fragrant.
- Add ground chicken and cook, breaking it up, for 5–7 minutes or until fully cooked.
- Stir in soy sauce and sweet chili sauce. Mix well to coat evenly.
- Add lime juice and cashews if using. Stir to combine.
- Remove from heat and garnish with cilantro, scallions, or carrots.
- Spoon chicken mixture into lettuce leaves and serve immediately.
