Ingredients

  • 2 cups all-purpose flour

Instructions

  1. Preheat the oven to 350°F (175°C) and grease or line a 9×9 inch baking pan with parchment paper.
  2. In a medium bowl whisk together the flour, baking powder, baking soda, and salt.
  3. In a large bowl beat the butter and sugar until light and fluffy.
  4. Add the egg and vanilla extract and mix until fully combined.
  5. Stir in the yogurt or sour cream until smooth.
  6. Gradually add the dry ingredients and mix until a crumbly dough forms.
  7. Press about two-thirds of the crumb mixture evenly into the bottom of the prepared pan to form the crust.
  8. In another bowl beat the cream cheese and sugar until smooth.
  9. Add the egg and vanilla extract and mix until creamy.
  10. Spread the cheesecake mixture evenly over the crumb crust.
  11. In a small bowl combine pineapple, mango, kiwi, lemon juice, and sugar then gently toss.
  12. Spoon the fruit mixture evenly over the cheesecake layer.
  13. Sprinkle the remaining crumb mixture over the top.
  14. Bake for 40–45 minutes until the top is golden and the center is set.
  15. Allow the dessert to cool completely before slicing into squares.
