Ingredients
Nonstick cooking spray, for greasing
1 1/4 cups whole-milk cottage cheese
1/4 teaspoon garlic powder
1/4 teaspoon Italian seasoning
1/8 teaspoon ground turmeric (optional)
Pinch kosher salt (to taste)
1 large egg
Filling:
2 tablespoons mayonnaise
1 tablespoon pesto
3–4 slices deli turkey
2 leaves romaine, sliced into ribbons
1 medium tomato, thinly sliced
1/2 avocado, thinly sliced
Instructions
- Preheat a nonstick skillet over medium heat and lightly grease with cooking spray.
- In a blender, combine cottage cheese, garlic powder, Italian seasoning, turmeric (if using), salt, and egg. Blend until smooth.
- Pour mixture into skillet, spreading evenly. Cook 2–3 minutes until edges set.
- Flip carefully and cook another 2–3 minutes until golden. Transfer to a plate to cool slightly.
- Mix mayonnaise and pesto in a small bowl, then spread over cooled wrap.
- Layer turkey, romaine, tomato, and avocado on top.
- Roll wrap tightly, slice in half, and serve.
Notes
- Whole-milk cottage cheese gives the best texture, but low-fat can be used.
- Turmeric is optional for color and earthy flavor.
- A blender or food processor gives the smoothest wrap texture.
- Let wrap cool slightly before filling to prevent tearing.
- Don’t overfill—rolling is easier with moderate filling.
