Ingredients
1 pound lean ground beef
1 yellow onion, chopped
1 cup chopped bell peppers (red and green)
1 can (15 oz) corn, drained
1 can (15 oz) black beans, rinsed
1 teaspoon chili powder
1/2 teaspoon cumin
Salt and pepper to taste
1 1/2 cups shredded cheddar cheese
2 cups tater tots or 2 cups crushed potato chips
Instructions
- Preheat oven to 350°F (175°C) and grease a 9×13 inch baking dish.
- In a large skillet, sauté onions and bell peppers over medium-high heat for 5 minutes until softened.
- Add ground beef and cook until browned and crumbly, about 5–7 minutes. Drain excess fat if needed.
- Stir in corn, black beans, chili powder, cumin, salt, and pepper. Cook for 3–4 minutes until heated through.
- Transfer the mixture to the prepared baking dish and spread evenly.
- Top with shredded cheddar cheese.
- Add an even layer of tater tots or crushed potato chips on top.
- Bake for 25–30 minutes, until the top is golden and the cheese is bubbly.
- Let cool slightly before serving.
