Ingredients

  • 12 ounces 96% lean ground beef

  • 8 teaspoons yellow mustard (2 tsp per wrap)
  • 4 ounces reduced-fat shredded cheddar cheese (1 cup total)

  • 8 teaspoons dill gherkins, finely chopped
  • 1 cup lettuce, chopped
  • Cooking spray, as needed

Instructions

  1. Preheat a large cast-iron skillet over medium-high heat.
  2. Cut 1 tortilla wrap into quarters and toast each piece for 1 minute per side in the dry skillet. Remove and cool. These will form the crunchy center.
  3. Preheat a nonstick skillet over medium-high heat and lightly coat with cooking spray.
  4. Add ground beef, onion, salt, and pepper. Cook 5 minutes, breaking up the beef until fully cooked and onions are tender. Remove from heat and cool slightly.
  5. Spray one side of a whole tortilla lightly with cooking spray. Spread 2 teaspoons mustard in the center, leaving a 1½-inch border.
  6. Spoon ~1/2 cup beef mixture over the mustard. Top with 1/4 cup cheddar, 1/4 cup tomatoes, 2 tsp pickles, and 1/4 cup lettuce.
  7. Place one toasted tortilla quarter on top of the filling.
  8. Carefully fold the edges inward, pleating to enclose the filling.
  9. Place seam-side down in the heated skillet and cook 2 minutes per side until golden brown and crispy.
  10. Repeat with remaining ingredients to make 4 crunch wraps.
