Ingredients
- 4 tilapia fillets (about 1 lb)
- 2 tablespoons fresh lemon juice
- 3 garlic cloves, minced
- 3 tablespoons extra virgin olive oil
- 2 cups assorted vegetables (bell peppers, zucchini, broccoli)
- 1 teaspoon salt
- 1/2 teaspoon black pepper
- Optional: extra lemon juice for serving
Instructions
- Preheat oven to 400°F (200°C). Spray a large baking dish with nonstick cooking spray.
- In a small bowl, whisk together olive oil, lemon juice, minced garlic, salt, and pepper.
- Place tilapia fillets in the baking dish and drizzle with the lemon garlic mixture, coating evenly.
- Chop vegetables into bite-sized pieces and arrange around the fish. Drizzle any leftover lemon garlic mixture over the veggies.
- Bake for 20–25 minutes, or until the tilapia flakes easily with a fork and vegetables are tender and slightly caramelized.
- Plate the tilapia and veggies, and optionally squeeze extra lemon juice on top before serving.
Notes
- Swap tilapia for cod or haddock if preferred.
- Use seasonal vegetables like asparagus or cherry tomatoes.
- Sprinkle with paprika or dill for added flavor.
- Marinate the tilapia for 30 minutes beforehand for extra flavor.
- Can also pan-sear the fish and roast veggies separately.
