Ingredients

  • 4 tilapia fillets (about 1 lb)
  • 2 tablespoons fresh lemon juice

  • 1 teaspoon salt

Instructions

  1. Preheat oven to 400°F (200°C). Spray a large baking dish with nonstick cooking spray.
  2. In a small bowl, whisk together olive oil, lemon juice, minced garlic, salt, and pepper.
  3. Place tilapia fillets in the baking dish and drizzle with the lemon garlic mixture, coating evenly.
  4. Chop vegetables into bite-sized pieces and arrange around the fish. Drizzle any leftover lemon garlic mixture over the veggies.
  5. Bake for 20–25 minutes, or until the tilapia flakes easily with a fork and vegetables are tender and slightly caramelized.
