Ingredients
- 1 pound beef sirloin tip steak, thinly sliced into 1/4-inch strips
- 1/4 cup low-sodium soy sauce
- 2 tablespoons Worcestershire sauce
- 3 tablespoons brown sugar
- 1/2 teaspoon garlic powder
- 1 teaspoon onion powder
- 1/4 teaspoon black pepper
- 1/4 teaspoon red pepper flakes
Instructions
- Place the beef in the freezer for 30–45 minutes to firm it up for easier slicing.
- Slice the beef into 1/4-inch strips against the grain for tenderness.
- In a bowl, mix soy sauce, Worcestershire sauce, brown sugar, garlic powder, onion powder, black pepper, and red pepper flakes until well combined.
- Add the beef slices to the marinade and toss to coat evenly.
- Cover and refrigerate for at least 4 hours, preferably overnight.
- Remove the beef from the marinade and pat dry with paper towels.
- Preheat the air fryer to 180°F (or lowest setting available).
- Arrange beef strips in a single layer in the air fryer basket without overlapping.
- Cook for 2–3 hours, flipping halfway through, until dried but still slightly pliable.
- Allow the jerky to cool completely before storing or serving.
Notes
- Freezing the beef slightly makes slicing much easier.
- Always slice against the grain for a more tender texture.
- Patting the meat dry helps achieve proper drying in the air fryer.
- Do not overlap strips to ensure even cooking.

- Jerky should be dry but still flexible, not brittle.
