A simple homemade air fryer beef jerky with a savory, slightly sweet marinade that creates tender, chewy strips packed with flavor and protein.

Ingredients

  • 1 pound beef sirloin tip steak, thinly sliced into 1/4-inch strips
  • 1/4 cup low-sodium soy sauce
  • 2 tablespoons Worcestershire sauce
  • 3 tablespoons brown sugar
  • 1/2 teaspoon garlic powder
  • 1 teaspoon onion powder
  • 1/4 teaspoon black pepper
  • 1/4 teaspoon red pepper flakes

Instructions

  1. Place the beef in the freezer for 30–45 minutes to firm it up for easier slicing.
  2. Slice the beef into 1/4-inch strips against the grain for tenderness.
  3. In a bowl, mix soy sauce, Worcestershire sauce, brown sugar, garlic powder, onion powder, black pepper, and red pepper flakes until well combined.
  4. Add the beef slices to the marinade and toss to coat evenly.
  5. Cover and refrigerate for at least 4 hours, preferably overnight.
  6. Remove the beef from the marinade and pat dry with paper towels.
  7. Preheat the air fryer to 180°F (or lowest setting available).
  8. Arrange beef strips in a single layer in the air fryer basket without overlapping.
  9. Cook for 2–3 hours, flipping halfway through, until dried but still slightly pliable.
  10. Allow the jerky to cool completely before storing or serving.

  • Freezing the beef slightly makes slicing much easier.
